Recipe of the week Mix a little flour with salt and pepper. Dip steaks in egg, then in flour. Use margarine or oil to fry in a skillet on low heat for four minutes or until medium brown on both sides. Mashed potatoes Peel three or more potatoes and cut in four pieces each. Put in a pan of water with some salt. Chefs said that the salt taste is boiled into the food and is better than pouring it in later. Boil for 20 minutes or until ready to mash. Drain right away or the potatoes will absorb water and be too wet. Add butter, and a little milk and some pepper. An electric mixer may be used for mixing. Gravy If there are some drippings left, make some gravy. If not, use a can of chicken broth. Put the broth in a small skillet with a little salt and pepper. Make a rue (a thickener) with 1/2 cup milk and a couple tablespoons of flour. Stir or shake until mixed. Stir into the broth slowly until it's thick enough. - Joyce Barnett |
