Special prices inspire dinners

Recipe of the week

This week's recipe uses local store specials announced Wed., Oct. 8 through Tues., Oct. 14.

Albertsons is offering boneless skinless chicken breasts for $1.99 per pound. CHICKEN MARSALA 1 pound boneless, skinless, chicken breasts 4 tablespoons flour seasoned with pepper 4 tablespoons butter ½ pound sliced fresh mush rooms (optional) 2 tablespoons beef bouillon ½ cup Marsala wine

Put chicken between two pieces of wax paper and pound thin. Cut chicken into serving pieces and coat each piece with flour.

Heat butter in skillet until hot, add the chicken and cook over medium-high heat until browned on both sides. Add the mushrooms and sauté briefly.

Add beef bouillon and Marsala, swoosh everything around in the pan and cook 1 minute longer.

Arrange chicken on a hot serving platter, pour pan juices over and serve. Serves four.

For a side dish, Albertsons is offering Fresh Express Green and Crisp Lettuce Trio for $2.50 per bag. This is ready to eat salad.
