Recipe of the week
Homemade summer salmon patties, soup
By Joyce Barnett Special to the Acorn

This is my mom's old recipe. When you can't think of anything else to fix, these are always yummy. The Active Adult seniors love them also. 1 can salmon 2/3 package soda crackers 1 egg Salt and pepper 1/4 cup diced onion, if you like

Clean the black stuff off the salmon. You can leave the bones in it. They say it gives you calcium. Don't drain the fluid from it. Mix all together. If it's too dry, add a little milk. Form into patties about 6 inches around. Fry in cooking oil till brown on both sides.

For salmon soup, put a can of salmon in a medium-sized sauce pan. Clean off the black stuff and take the bones out. Chop it up a little. Add 3 cups milk, 1/2 teaspoon salt and some pepper. Stir it to mix the salmon. Shut it off when it starts boiling hard. Put a tablespoon of butter in it. Serve with crackers. Serves 3.
